
Hand prepared at home in Wensleydale, Yorkshire, Well Oiled make wonderful Extra Virgin Olive Oil products. Favourites include Fresh, Homemade, Basil Pesto, Black Olive Tapenade, various Antipasti and , of course, Infused Oils.Beautifully presented in clear glass bottles and jars, they are hand finished with Homespun Gingham and Natural Jute. My range of Italian style Antipasti are based on recipes gleaned from Italian friends and neighbours during the years I spent living in Puglia, the "heel" of Italy. I have given the recipes a Yorkshire Twist too, and use local ingredients from fellow Yorkshire producers wherever possible.
Of course, there is no substitute for Italian Olive Oil, and after several years of searching - I have selected a gentle Extra Virgin Olive Oil from Umbria to form the basis of my oil infusions, whilst for the more strongly flavoured Infus-iastic, I use a robust, cold pressed extra virgin olive oil from Puglia. Feta Cheese is a familiar taste, but here in Yorkshire we prefer Mrs Bell's "Fine Fettle" Cheese. Preserved in oil like its Mediterranean cousin, it is also tasty when a little fire, in the form of chilli flakes, is introduced. Similarly, Goats Cheese takes on a new, more subtle flavour after steeping in olive oil flavoured with lemon zest and thyme.
